What's for dinner when it's too hot to cook? And I am leaving for a week and there is a full head of Romaine lettuce, cucumber, green pepper, and tomatoes on hand? Which the husband won't touch while I'm gone.
Since we ate at Five Guys for the Fourth of July--I had to have a burger and no one invited us to a cookout, and Saturday night we tried a new pizza place, because we ALWAYS go out Saturday night, I announced at breakfast Sunday that we were having SALAD FOR DINNER:
Your favorite veggies, extra yummy touches like black olives, red onions, nuts, raisins, and a good amount of a protein or two.
What I had on hand: Canned Pink Salmon, Canned Smoked Oysters, a can of black olives, and all the veggies. I usually make my own dressing but was out and am leaving so the G Hughes Sugar Free Honey Dijon Mustard bottled dressing works for me. Hubby likes Hidden Valley Ranch so that is always on hand.
Add a nice glass of wine and this meal is done!
If I needed some dessert, I would have a cup of berries and a big dollop of low sugar Greek Yogurt--Too Good Low Sugar Vanilla Yogurt is my favorite--I have it every day in my oatmeal with frozen berries. With a trip coming up I back off on dessert or extras the week before.

Slow cooker recipes are always welcomed in the summer when it's too hot to cook. BLTs are usually fresh & delicious this time of year too for a quick bite. Where you headed for next week? Hope it's a teaching tour!

Deletehi Barbara, i have to tell you that you are a totaly inspiration to me! i also had my own journey with weight loss, my whole life i was a size 4 or a most 6 and then into the 50's i went up to a size 48 in one year!!!!! [all hormones]. well i finially lost it back to a size 6 and then slowly slowly, pitzaed my way back up! about 3 years ago, i ook myself in hand and over about 1 year lost it all again. now , when everyone thinks i'm a bit of a fanatic, i think of you, enjoying your health, your life and just smile and keep going. thank y ou. shoshana

DeleteI just love that picture! It's easy to forget those cans that add protein to the stuff I'm ignoring in the fridge drawers...and it's almost lunch time.
ReplyDeleteI make a similar bowl of food on really hot evenings. I like to tear up romaine, and red leaf lettuce. I add cucumbers, black olives, some shredded or thinly sliced carrots, and maybe some green onions, and any color of pepper I might have. Then I usually throw in a drained and rinsed can of black beans, and even some leftover cooked and chilled brown rice. I'll add a handful of raw cashews to each bowl, and I choose a sugar free vinaigrette, while hubby chooses ranch (must be a guy thing). If I have any leftover chicken on hand, that will land on top.
